Teetotaled recipe — Sorta Greek salad

I love Greek food, especially Greek salads. Here is my version of a Greek salad. It is perfect for a light lunch or as a side dish at any BBQ.

Sorta Greek Salad

What you will need:

  • 1 green pepper
  • 1 small can of chick peas
  • 1 small container of feta cheese (reduced fat)
  • 1-2 tomatoes (any kind - recommend plum or vine)
  • 1 cucumber (peeled)
  • dried oregano
  • olive oil

To prepare: The ingredients listed above are for a salad for 2 people. It is very easy to adjust this recipe, just increase ingredients evenly. Chop all vegetables and combine in mixing bowl. Add in feta cheese, I don’t measure this I just do it by sight. Top with oregano flakes and a few teaspoons of olive oil until evenly coated and mix. Serve chilled.

Add ins: I often add chopped avocado to this recipe, which is delish. You can easily add black olives which is more traditional for a Greek salad, or red onion. Can also add lemon juice for taste. When serving for lunch, I like to add a side of humus to dip salad into.
