Who doesn’t love tacos?! Here is a quick, easy and fairly inexpensive taco meal.
No-cook vegetarian tacos
What you will need:
1 box of all-natural blue corn masa taco shells (usually 12 in a box)
1 small jar of organic medium salsa
2-3 cups of shredded lettuce
1 green pepper (diced)
1 ripe avocado (sliced thin)
1-2 tomatoes (diced-any variety)
1-2 cups shredded cheddar or other cheese
The directions here are pretty easy. No cooking involved, unless you want to heat up the taco shells in the toaster. Chop all ingredients and lay out in separate bowls for easy assembly. Serve buffet style, letting people fill their own tacos. Can easily adjust these ingredients for 1 person or 10.
Possible add ins: Obviously if you are a meat eater you can add chopped meat or chicken. For veggies any variety of tofu or packaged tempeh would work well cooked or uncooked for this dish, as well as cooked rice. Can experiment with different types of sauces, cheeses and seasonings. My husband likes to add ranch dressing to his. Be creative.
