This recipe was inspired by a dish I saw in a low-carb magazine a few years ago. It is simple, not too expensive and low-fat. You can make this dish sort of like an eggplant rollatini by rolling the eggplant into a wrap shape, or put 2 slices of eggplant together using the eggplant like slices of bread.
Eggplant Sandwhich
1-2 large eggplants, peeled and sliced longways
2 eggs for dipping
Breadcrumbs to dredge eggplant in
Inside the eggplant wrap/sandwhich — diced tomatoes, garlic, basil (fresh or flakes) arugula and shredded mozzarella cheese.
To prepare the eggplant: Peel and slice the eggplant in long thin slices. Thiness is a matter of preferrence but if you want to roll the eggplant the slices need to be very thin. Let eggplant slices sit at room temperature for at least an hour. Then dip eggplant in egg and dredge in breadcrumbs. Place slices on a baking sheet, drizzle with olive oil and salt and pepper and bake at 350 degrees until cripsy and cooked through. Depending on your oven this should take 15-30 minutes.
Prepare sandwhich ingredients while eggplant is cooking: Dice tomatoes (can use vine, plum or any variety- should end up with about 2 cups of chopped tomatoes) and set aside in a bowl with garlic and olive oil. Wash and set aside a bunch of arugula, can chop or leave in large bunches. Set aside mozzarella cheese.
When eggplant comes out of the oven immediately add sandwhich filler while eggplant is hot. If rolling the eggplant into a wrap shape use regular toothpicks to keep wraps closed after being filled with tomato, arugula and mozz. If you are using two pieces of eggplant to make a sanwhich just place one slice on plate, top with tomatoes, mozz and arugula and serve. Can serve with rice, side salad, etc. Makes a terrific main dish.
Additional sandwhich fillers: You can use any type of cheese you want for this dish. For convenience sake, I prefer to buy cheese that is already shredded to save time. You can also omit the cheese and use a hummus spread instead. Besides arugula, a mesclin mix or other type of lettuce will work just as well. You could add a Greek flavor by using, feta, olives and lettuce, or you could even add proscuitto or another meat if you are not vegetarian. Play around with the ingredients until you find the perfect combination for you.
