Happy St. Pats!

Happy St. Patrick’s Day! In honor of St. Pats, which is also my mother’s birthday, I am going to make an Irish soda bread (my grandmother’s traditional Irish recipe).  I also decided to sign the petition to make St. Patty’s Day an official holiday.

    I have a corned beef brisket slow-cookin’ as we speak. I’m not even Irish, but I sure like corned beef. So Happy St. Patrick’s Day to you.

    Our…er, my corned beef dinner has not yet materialized. When it was time to eat, it was seriously undercooked by about 4 hours. Can you believe that?!!! Don’t know what went wrong unless the old cooker isn’t working anymore. Well, we settled for tacos because we had a lot of left-over taco fixin’s. Nothing like a great taco and My First Wife fixes the greatest.

    Tomorrow, we’ll reheat the corned beef, cabbage and taters and try again.

    Oh no! Sorry to hear your corned beef and cabbage dinner was a bust Paul. We had tacos as well! :) (Actually tacos followed by Irish soda bread)
