Sometimes the simpliest ideas can be the most fun. Take for example - breakfast for dinner. I cook dinner at least 5 nights a week and sometimes I run out of interesting ideas of what to make. In the summer you can always grill, weather permitting, but even that can get a little boring after a while. In the winter you can always make soup or throw something in the crock pot, but still, it can get repetitive and tedious.
So when all else fails, there is always breakfast for dinner. I’m not sure why having breakfast food for dinner is so appealing, but it seems to be a hit every time. I rarely eat eggs or pancakes for my actual breakfast so it always intrigues me when I am in the mood for these foods at dinnertime. Last night, I was considering making a pizza and then I asked my husband if he would rather have breakfast for dinner and got a resounding YES! So I heated up some pillsbury croissants and made some scrambled eggs with cheese - simply, quick, comforting = perfect!
Funny how having “dinner food” for breakfast has never appealed to me. Guess that trick doesn’t work in both directions. Baked ziti at 8:00 a.m. does not sound appealing, but pancakes at 6?! Wonderful! ![]()

I know!! I have done it tons of times! Try Omelets -very good opcion, you can throw lots of veggies, cheeses, and meets (bacon, turkey, sausage) and its a full meal! Warm oatmeal, yogourts… all work for me.
